How to make rice flour roti?
This is popularly knows an Akki roti in Southern India. It is a staple food in Karnataka and is primarily made up of rice or beaten rice along with spices and vegetables and served with a dip like chutney.
Roti as we all know is made up of wheat flour but akki roti adopts different ingredients and manner of cooking.
It is made of rice flour, onion, vegetables like carrot, capsicum and cabbage, chillies, ginger, grated coconut, cumin seeds and fresh coriander leaves with salt. The dough is formed together by adding water bit by bit. Once the dough is formed, it is left to rest for about ten to fifteen minutes. Now the cooking –this is the part where it gets tricky! Unlike roti, you cannot flatten them with a rolling pin. This dough is a lot softer and breaks with ease so it is basically flattened by hand on a piece of plastic wrapper.
If you’re a health freak, then you can use plantain leaf or butter paper as your working station. It is of paramount important that you grease this surface with oil or butter before transferring the dough to it. This will ensure smooth removal prior to cooking. Once the roti is flattened to your desired texture and consistency, the roti is moved to the tawa. Adjust the fire to medium flame and cook it on both sides until brown spots appear.
There is also another recipe that simply calls for two simple ingredients, namely rice flour and water.
For this, you simply have to place water on boil and then add the rice flour and stir well. This mixture will look flaky. Now turn off the heat and let it rest. Once the mixture is cooled off, it is ready to be kneaded. Divide the dough into several pieces and roll them into a round ball. Place the ball in between two pieces of parchment paper and use a rolling pin to flatten the dough.
Repeat the same procedure with the remaining pieces and keep all your rotis ready. Set the tawa heat to high and begin cooking each roti on both sides for a couple of minutes.
This isn’t as fancy as Akki roti but it works as a perfect base for layering it with delicious filling, just like a burrito.
