Ingredients Required To Make Kimji-Jigae
The ingredients are estimated based on serving two people 1 Kg of kimji well cleaned and chopped into bite-sized pieces, one-fourth cup of kimji brine, half kg of pork shoulder or pork belly, half a packet of tofu is sliced into half-inch thick pieces, or vegetables, you will need- 3 green onions and one medium size onion. Salt and sugar as per taste, 2 teaspoons of hot pepper flakes. 1 tablespoon of hot pepper paste, 1 teaspoon of toasted sesame oil, 2 cups of anchovy stock of chicken or beef broth.

7 large dried anchovies with their heads and guts removed. One-third cup of radish, sliced thinly, 4×5-inch sized dried kelp, three green onion roots, four cups of water.
The Original Kimji-Jigae Recipe
First, prepare the anchovies stock in a saucepan by adding green-onion roots, dried kelp, radishes, and anchovies. Next, add water and cook it for in medium flame about 20 minutes. After that, simmer the flame and cook it for five more min before straining the content, and it’s done! Now you start making the kimji-stew. First, add kimji, kimji brine, sliced onions and pork into a pot.
Next, add the ingredients such as sugar, hot pepper paste, salt, hot pepper flakes and hot pepper paste into it according to your taste and tolerance level. Now, cook it over medium heat for about ten minutes. Add your tofu into the pot and gently mix the ingredients. Continuing cooking it for more than 10-15 minutes for the medium-high heat. Last garnish it will green onions and serve it hot with rice.
